Last week, we posted in our Friday Trip Planning series about Snacks to Pack with a special diet. As we mentioned, many of our vendors offer snack-sized packs that are great for when you’re on the go.

Over here at #FACCWDW headquarters, we went to work in our respective kitchens creating and concocting some sweet and savory treats using ELF products as the main ingredients!

The Savory: Plentils Party Mix
4 cups gluten-free plain rice or corn cereal, or a mix, such as Chex
2 cups Plentils – Light Sea Salt
2 cups Plentils – Garlic & Parmesan
2 cups popped popcorn, unseasoned
1 cup gluten-free pretzels
6 tablespoons nondairy buttery spread, such as Earth Balance
2 tablespoons balsamic vinegar
2 teaspoons garlic powder
2 teaspoons onion powder
Preheat the oven to 250 degrees Fahrenheit. Put the cereal, Plentils, popcorn, and pretzels in a large bowl. Put the buttery spread in a small saucepan over medium heat. Cook until melted, then remove from heat and stir in the balsamic vinengar, garlic powder, and onion powder. Pour the mixture over the cereal mixture. Mix well to combine.
Spread the mixture in a single layer on one or two baking sheets. Bake for 1 hour, stirring every 15 minutes. Cool before snacking and storing. Store leftovers in a sealed container at room temperature for about a week, or up to 3 months in the freezer.
The Sweet: Double Chocolate Tahini Cereal Bars
For the bars:
1 3/4 cup gluten-free brown rice crisp cereal
1 cup finely ground Crunchy Double Chocolate Cookies (equivalent to 1 box/14 cookies)
10 tablespoons nondairy buttery spread, such as Earth Balance
1 3/4 cup roasted tahini
1/2 cup packed dark brown sugar
1/2 teaspoon fine sea salt
1 teaspoon vanilla extract
For the topping:
3/4 cup Dark Chocolate Morsels
3 tablespoons unsweetened nondairy milk
2 tablespoons roasted tahini
To make the bars, line a 9-inch square pan with aluminum foil. Put the cereal and crushed cookies in a large bowl. Mix to combine.
Put the buttery spread in a medium saucepan over medium heat. Cook until melted, then stir in the tahini, brown sugar, and salt. Mix well, then bring to a low boil. Cook for 90 seconds, stirring constantly (tahini can easily burn, so ensure the heat is still on medium and that you continue to stir). Remove from heat. Stir in the vanilla extract. Let cool 3 minutes. Pour the mixture over the cereal mixture. Mix to combine. Scrape the mixture into the prepared pan. Press down firmly. Put in the freezer while preparing the topping.
To make the topping, put the chocolate morsels in a small bowl. Put the nondairy milk and tahini in a small saucepan. Heat until steaming, mixing well. Pour the mixture over the morsels, stirring until the morsels have melted. Remove the pan from the freezer and spread the chocolate mixture over top. Return the pan to the freezer and freeze until firm, at least 20 minutes.
Cut into squares before serving or storing. Store left overs in a sealed container in the refrigerator or freezer.
