Chocolate. You love it. We love it. It’s always time for it. But when you have a dairy allergy, most chocolate is off limits, even the dark stuff which “may contain” milk. Sigh.

Thank goodness for PASCHA, a chocolate company founded by their mission to bring the purest, safest chocolate without any allergenic ingredients. Really! None of the 8 major food allergens are found in their eight varities of bars or three varieties of chocolate chips.

Planning a Disney Trip with a Special Diet: Celebrating this November

Blogger Street Team member Amy (aka Allergic Foodie) shares with us her excitement of travelling to Disney World this November to celebrate her recovery. Her blog Adventures of an Allergic Foodie provides help to fellow adults and families by sharing strategies, research, helpful products, personal stories, and more with insight in living food allergies, celiac disease and eosinophilic esophagitis. 

Go Back to Spring Break 2004. There I was in the happiest places on earth—Disneyland—feeling miserable. While my husband and two sons ran around the park enjoying a lifetime experience of rides, attractions and food, I crawled back to our hotel room and slinked into bed. The pain was unbearable and I was so exhausted, a kind of exhaustion I’d never felt before.

We’d flown to Anaheim from Colorado Springs to promote my second nonfiction book, The Pregnancy Bed Rest Book. Ah, I see the irony now–the book was for pregnant women, but I was spending my downtown under the covers. It was a trip none of us would forget—but for very different reasons.

When we returned from California, I sought answers for my health issues. Every doctor seemed to have a theory for my pain and GI woes that required a medical procedure followed by a surgery followed by rounds of antibiotics and painkillers. While I should have been getting better, I felt even worse–year after year.

We’re going to bet you’re pretty darn familiar with Babycakes NYC, the staple gluten-free, allergy-free bakery on-site at Walt Disney World. Once a Downtown Disney establishment, and maintaining a home in nearly all of the resorts and restaurants, Babycakes NYC provides Disney go’ers gluten, dairy, egg, and soy-free vegan baked goods. They started out in NYC, since then launched cookbooks, and now are a quick fan favourite. Even better — they’ll be at the Food Allergy and Celiac Convention this fall!

Planning a Disney Trip with a Special Diet: 11 Tips for First Timers

Blogger Street Team member Patrick Boyd shares with us his top tips for folks who are visiting Disney World for the first time. A seasoned Disney traveller, Patrick is gluten, dairy, and soy-free, and shares details on everything Disney-related on his blog, Stitch’s Home

You’re heading to Disney World for the first time for a trip of fun and pixie dust.  How about some tips and info to make life easier?

1.       First thing to know The Walt Disney World Resort is huge, comprising of four “theme” parks, two water parks, several golf and miniature golf courses, several resorts, and a shopping area that also contains a multi-story indoor video game “park.”   In short, odds are good you will not see everything there is to see and do in one trip, but that what future trips are for.

2.       In the parks themselves, an average guest walks about five or six miles a day, so bring comfortable shoes and clothes for walking.  If you want to get from one side of the park to other, it takes about ten to fifteen minutes walking and that assuming routes aren’t blocked from a show or parade.  This is important to keep in mind when deciding how to use the FastPass returns or if you need to be across the park for a dinner reservation.  While you are trekking back and forth in the parks remember to slow down a bit and take in the scenery.   It also is helpful to take a break and grab a drink to rest and relax a bit.  You can do that in general, or just plot out periods of time to eat, watch parades, shows, etc.  Many people often find it handy to break the long day up by returning to the resort during the middle of the day to nap or hit the pool and return that evening.

1. Can you tell us a little more about EZ Gluten™?

EZ Gluten™ is a rapid, fast and sensitive test for the detection of Gluten in food samples. The test detects levels as low as 10 ppm. Our test has a PTM status. This means it as gone through trials and is excepted as a preferred testing method from the AOAC. The FDA accepts our test as an approved method.

2. Traveling can be a challenge. How can EZ Gluten™ help those traveling to places like FACCWDW?

EZ Gluten™ was not created to test every food eaten. That would be much too expensive. If you would like to bring something new into your home or while on vacation, you can use the test to avoid discomfort. The test is small enough to carry in your pocket. When you spend so much on a vacation, the last thing you want to do is stay in your room sick.

3. Can you give us a little behind the scenes info on how ELISA Technologies, Inc. created EZ Gluten™?

We have been in the food testing business since 1980. Our main focus has been meat speciation. We manufacture the kits that the USDA uses. So, basically we can tell you if your beef burger has horse meat mixed in. We had been getting requests from customers for a method to detect Gluten. We created the ALLER-TEK Kit. Manufacturers asked for a more rapid method to test production lines. Once EZ Gluten™ was developed, we put it on line for public use. The demand has been incredible.

4. What’s the most commonly asked question about EZ Gluten™?

Is it fast and easy? The answer is, Yes!

5. We’re sure that those who have used EZ Gluten™ have provided you with feedback on how it has affected their lives. What are some comments that have stood out?

We get great feed back! When you call ELISA Technologies, Inc. you get personal attention. We try to help people on a regular basis. Sometimes we have the answers and when we don’t, we try to find the answers. We have helped numerous individuals as well as manufacturers. Several students have won science fairs using our kit! So, happy and proud of them. Customers have commented about our kit has improved the quality of their life. One woman who was severely affected by Gluten said she was breaking out with a rash and wondered if she was getting a false negative from our test. We worked through the issue and helped her to find out that her dog was eating his food and getting on her bed. when she got into bed, she would have contact where his face had been. His Gluten free dog food tested positive. She was so happy. From what I understand, her dog was happy too. She now cooks him chicken and rice! It’s nice to be able to help.

It has been awhile since we have been to disney. Never since we have kids…and we are very excited to try anything peanut/nut allergy friendly. I hear disney is wonderful about allergies and also children with disabilities. My daughters would LOVE to go to disney.

3. What is the most fun you’ve ever had an event and what happened? 

Our company was having a conference in Orlando and Bear Grylls would be the key note speaker.  Bear Grylls is the Chief Boy Scout and I knew Boy Scouts in the area would love to meet him and hear his story.  Being the youngest to climb Mt. Everest, have his own TV show, lives on an island (off the grid) with his wife and children and being from the Royal Family, he was already a star.

I met with the Boy Scout Counsel in Orlando and they said to send them a flyer and they would send to the troops.  Within 24 hours, we had a response of over 887 and counting.  I contacted our company and explained I had a few guests coming to the event and would like a section for my special guests.  When the asked me how many, they were in shock.  I had to have my own room to accommodate them and Bear came and signed hats and gave each kid a poster.  It was the centennial year for the USA BSA and my husband created a badge especially for the occasion.  We also had a badge for each scout from the UK for their centennial year.

So much fun making memories for so many….including me.

4. We love making fruits and veggies fun, too, like your artwork here. What fruits and veggies would you use to make Mickey Mouse?

I would make a happy tray of berries and fruit as seen below.  With grapes, blueberries, apples and strawberries.  Kids love fruit and when it’s in a fun shape, it just taste better.

Ever been to Epcot at Walt Disney World? If so, you might be familiar with Tower Garden already, purveyors of the ‘tower gardens’ seen in The Land (more on that below).Tower Garden® is a state-of-the-art vertical aeroponic growing system that grows almost anything in less time than it takes in soil.

Even if you have the antithesis of a green thumb, Tower Garden requires no gardening experience. It is an easy to assemble, easier to use system–and it gives back to the environment, too, using less than 10% of the water and land required by traditional, soil-based agriculture.

Tower Garden is joining us alongside JuicePlus+ for the FACCWDW; stay tuned for JuicePlus+’s Meet Our Vendors next week, but first, we’ll learn a little more about Tower Garden.

1. What’s the craziest/funniest/most memorable time you’ve experienced with a Tower Garden customer?

One potential customer was moving out of state and hunted me down to make sure they had my correct information to order as soon as they arrived to their new home.  That was a Friday and by Monday, the order was placed.

2. We understand that Tower Garden has a special Disney and Epcot connection. Can you tell us a little bit about that? 

Tim Blank created the Tower Garden for Disney/Epcot.  One lady purchased the commercial Tower Gardens to place in her many greenhouses that feed a 3rd world country.

On a visit to her farm, The JuicePlus company president visited her facility.  After eating a salad she prepared from the Tower Gardens, she made the connection with Tim Blank who was, coincidentally, working on a home user version but had not found a company to work with the distribution, manufacturing, etc.  Once he discovered the amazing credibility of the JuicePlus Company, Tim knew this would be a great complementary product for each other.

3. What is Aeroponics?

Aeroponics is the process of growing plants in an air or mist environment without the use of soil or an aggregate medium (known as geoponics). The word “aeroponic” is derived from the Greek meanings of aero- (air) and ponos (labour). Aeroponics is conducted without a growing medium. Because water is used in aeroponics to transmit nutrients, it is sometimes considered a type of hydroponics.

Oxygen stimulates plant growth as it delivers more nutrient to the root system.  Oxygen is an excellent purifier for plants.  Less disease and insects without the ground element.  Due to the disease-free environment that is unique to aeroponics, many plants can grow at higher density.

4. Living with the Land is one of our favorite Epcot attractions, and we love that Tower Garden lets us create our version of the attraction at home! If you could pick one Disney inspired product to grow in our home Tower Garden what would it be?

Have you seen the zucchini?  WOW!  That always makes the jaw drop.  You can make Zucchini Chips for a healthy snack, put them in soups; I have a mean Zucchini Bread recipe and on the grill…well, you can probably taste it right now.

5. If you could create a Tower Garden inspired by a Disney character who would it be?

I think I’m going with Tinker Bell because like Tink, the Tower Garden by JuicePlus is simply magical.

The majority of kids (and adults) do not like foods that are green, but we see kids loving green foods once they become involved in the process of watching and eating the healthy foods grow.  Such as, we are now a partner with The Green Bronx Machine who has also worked with Disney to come up with the slogan “Pass the Plate”.

We really are transforming the next generation.  Let’s do it with food.

There is so much to share about Downtown Disney, but we’ll definitely start with the basics. For folks visiting the Food Allergy & Celiac Convention, Downtown Disney is the perfect way to get a Disney-fied dose of magic without having to the pay for park tickets–in fact, it’s free to visit, whether you’re at Disney or not.

Downtown Disney is a fun-filled location loaded with restaurants, entertainment and unique shops, all along a waterfront and situated in a beautiful area. Parking is free and Disney buses travel there from the resort hotels (free of charge). It includes three sections: Downtown Disney West Side, Downtown Disney Marketplace and Pleasure Island. Even better, we’ll be having some post-event fun there on site (stay tuned!)
