Chocolate. You love it. We love it. It’s always time for it. But when you have a dairy allergy, most chocolate is off limits, even the dark stuff which “may contain” milk. Sigh.

We’re going to bet you’re pretty darn familiar with Babycakes NYC, the staple gluten-free, allergy-free bakery on-site at Walt Disney World. Once a Downtown Disney establishment, and maintaining a home in nearly all of the resorts and restaurants, Babycakes NYC provides Disney go’ers gluten, dairy, egg, and soy-free vegan baked goods. They started out in NYC, since then launched cookbooks, and now are a quick fan favourite. Even better — they’ll be at the Food Allergy and Celiac Convention this fall!

1. Can you tell us a little more about EZ Gluten™?

EZ Gluten™ is a rapid, fast and sensitive test for the detection of Gluten in food samples. The test detects levels as low as 10 ppm. Our test has a PTM status. This means it as gone through trials and is excepted as a preferred testing method from the AOAC. The FDA accepts our test as an approved method.

2. Traveling can be a challenge. How can EZ Gluten™ help those traveling to places like FACCWDW?

EZ Gluten™ was not created to test every food eaten. That would be much too expensive. If you would like to bring something new into your home or while on vacation, you can use the test to avoid discomfort. The test is small enough to carry in your pocket. When you spend so much on a vacation, the last thing you want to do is stay in your room sick.

3. Can you give us a little behind the scenes info on how ELISA Technologies, Inc. created EZ Gluten™?

We have been in the food testing business since 1980. Our main focus has been meat speciation. We manufacture the kits that the USDA uses. So, basically we can tell you if your beef burger has horse meat mixed in. We had been getting requests from customers for a method to detect Gluten. We created the ALLER-TEK Kit. Manufacturers asked for a more rapid method to test production lines. Once EZ Gluten™ was developed, we put it on line for public use. The demand has been incredible.

4. What’s the most commonly asked question about EZ Gluten™?

Is it fast and easy? The answer is, Yes!

5. We’re sure that those who have used EZ Gluten™ have provided you with feedback on how it has affected their lives. What are some comments that have stood out?

We get great feed back! When you call ELISA Technologies, Inc. you get personal attention. We try to help people on a regular basis. Sometimes we have the answers and when we don’t, we try to find the answers. We have helped numerous individuals as well as manufacturers. Several students have won science fairs using our kit! So, happy and proud of them. Customers have commented about our kit has improved the quality of their life. One woman who was severely affected by Gluten said she was breaking out with a rash and wondered if she was getting a false negative from our test. We worked through the issue and helped her to find out that her dog was eating his food and getting on her bed. when she got into bed, she would have contact where his face had been. His Gluten free dog food tested positive. She was so happy. From what I understand, her dog was happy too. She now cooks him chicken and rice! It’s nice to be able to help.

1. What’s the craziest/funniest/most memorable time you’ve experienced with a JuicePlus+ fan?   

A lady’s 4 year old son with gluten intolerant issues, refused to eat any fruits or vegetables.  After being on the FREE Children’s Chewables for about 3 weeks, she emailed me a picture of her son eating an apple, broccoli and more.  She had to spend so much time off of work to accommodate his illness.  The comfort of a mom’s heart is worth every penny.  That was months ago and he has not been back to the doctor and guess who is not spending money at the doctor’s office or on prescription meds?  JOY JOY!!

2. If you could create a smoothie recipe using JuicePlus+ products inspired by a Disney attraction, what would it be?

Mission to Mars – This smoothie gives you a blast off, regulates your blood sugar and gives you endurance for the next attraction.

We have our own Smoothie Mix that comes in French Vanilla or Chocolate.  Being the official sponsor of the Winter Olympics, we know the value of putting back what the body uses.

1 cup of Florida orange juice

3. What is the most fun you’ve ever had an event and what happened? 

Our company was having a conference in Orlando and Bear Grylls would be the key note speaker.  Bear Grylls is the Chief Boy Scout and I knew Boy Scouts in the area would love to meet him and hear his story.  Being the youngest to climb Mt. Everest, have his own TV show, lives on an island (off the grid) with his wife and children and being from the Royal Family, he was already a star.

I met with the Boy Scout Counsel in Orlando and they said to send them a flyer and they would send to the troops.  Within 24 hours, we had a response of over 887 and counting.  I contacted our company and explained I had a few guests coming to the event and would like a section for my special guests.  When the asked me how many, they were in shock.  I had to have my own room to accommodate them and Bear came and signed hats and gave each kid a poster.  It was the centennial year for the USA BSA and my husband created a badge especially for the occasion.  We also had a badge for each scout from the UK for their centennial year.

So much fun making memories for so many….including me.

4. We love making fruits and veggies fun, too, like your artwork here. What fruits and veggies would you use to make Mickey Mouse?

I would make a happy tray of berries and fruit as seen below.  With grapes, blueberries, apples and strawberries.  Kids love fruit and when it’s in a fun shape, it just taste better.

5. What are five facts we’d never guess about the team at JuicePlus+?

Ever been to Epcot at Walt Disney World? If so, you might be familiar with Tower Garden already, purveyors of the ‘tower gardens’ seen in The Land (more on that below).Tower Garden® is a state-of-the-art vertical aeroponic growing system that grows almost anything in less time than it takes in soil.

Even if you have the antithesis of a green thumb, Tower Garden requires no gardening experience. It is an easy to assemble, easier to use system–and it gives back to the environment, too, using less than 10% of the water and land required by traditional, soil-based agriculture.

Tower Garden is joining us alongside JuicePlus+ for the FACCWDW; stay tuned for JuicePlus+’s Meet Our Vendors next week, but first, we’ll learn a little more about Tower Garden.

1. What’s the craziest/funniest/most memorable time you’ve experienced with a Tower Garden customer?

One potential customer was moving out of state and hunted me down to make sure they had my correct information to order as soon as they arrived to their new home.  That was a Friday and by Monday, the order was placed.

2. We understand that Tower Garden has a special Disney and Epcot connection. Can you tell us a little bit about that? 

Tim Blank created the Tower Garden for Disney/Epcot.  One lady purchased the commercial Tower Gardens to place in her many greenhouses that feed a 3rd world country.

On a visit to her farm, The JuicePlus company president visited her facility.  After eating a salad she prepared from the Tower Gardens, she made the connection with Tim Blank who was, coincidentally, working on a home user version but had not found a company to work with the distribution, manufacturing, etc.  Once he discovered the amazing credibility of the JuicePlus Company, Tim knew this would be a great complementary product for each other.

3. What is Aeroponics?

Aeroponics is the process of growing plants in an air or mist environment without the use of soil or an aggregate medium (known as geoponics). The word “aeroponic” is derived from the Greek meanings of aero- (air) and ponos (labour). Aeroponics is conducted without a growing medium. Because water is used in aeroponics to transmit nutrients, it is sometimes considered a type of hydroponics.

Oxygen stimulates plant growth as it delivers more nutrient to the root system.  Oxygen is an excellent purifier for plants.  Less disease and insects without the ground element.  Due to the disease-free environment that is unique to aeroponics, many plants can grow at higher density.

4. Living with the Land is one of our favorite Epcot attractions, and we love that Tower Garden lets us create our version of the attraction at home! If you could pick one Disney inspired product to grow in our home Tower Garden what would it be?

Have you seen the zucchini?  WOW!  That always makes the jaw drop.  You can make Zucchini Chips for a healthy snack, put them in soups; I have a mean Zucchini Bread recipe and on the grill…well, you can probably taste it right now.

5. If you could create a Tower Garden inspired by a Disney character who would it be?

I think I’m going with Tinker Bell because like Tink, the Tower Garden by JuicePlus is simply magical.

The majority of kids (and adults) do not like foods that are green, but we see kids loving green foods once they become involved in the process of watching and eating the healthy foods grow.  Such as, we are now a partner with The Green Bronx Machine who has also worked with Disney to come up with the slogan “Pass the Plate”.

We really are transforming the next generation.  Let’s do it with food.

Meet Our Vendors! >> YoDish

Travel… Dining out…Can be someone with food allergies’ worst nightmare. Chances are, you’re in this boat, and you’re well aware that dining out on a restricted diet can result in great success or fast failure. Thankfully… there’s an app for that (we had to say it!) YoDish is a fast and fun way to share food allergy, gluten free, vegetarian, and vegan dining experiences and read reviews by others to help you make plans–even at Disney World! Here’s a little bit more about the brains behind the operation:

1. Inquiring minds want to know — how did you come up with the name YoDish?

I wish I could say that it just came to me, but it wasn’t nearly that easy.  My wife and I spent tons of time brainstorming for a name, and we previously launched a website called Allergen Menu and eventually the app with the name Noshed It.  We quickly discovered that most people were not familiar with the word Nosh, which means to eat or snack, and everyone struggled with the pronunciation, most going with “No Shed It” – it was a disaster.

Ultimately, we ran a naming contest on crowdSPRING and received well over a 1,000 ideas.  It was awesome!  One of the ideas was YoDish, which had everything we were looking for in a name.  We loved how several relevant meanings could be read into the name.  The one I identify with the most is YoDish being a mashup of Your Dish since we help you find the dishes that work for you.  My wife thought using “Yo” made it fun and catchy.  In fact, she kind of wishes she could change her handle from “AllergenMenuMom” to “YoMama”.

2. Tell us more about what made you want to create this App.

When our first daughter was about nine months old, she was diagnosed food allergic to dairy, eggs, peanuts, and tree nuts.  The adjustment involved in keeping her safe was incredibly overwhelming for my wife and I, with dining out being just one of many challenges we faced.

I love to eat out, and I love to travel, but I believe dining out is far more significant than just a form of entertainment.  Dining out is frequently a stage for developing new relationships, whether they be social or business related.  I am looking forward to traveling as a family, and I don’t want my children to be hampered in any way from pursuing their dreams or excelling in any career they choose.

Since beginning our journey with food restrictions, our third child has also been diagnosed with a food allergy, and my wife has gone gluten free in an effort to manage migraine headaches and GI issues.  We need YoDish now more than ever, and we are constantly working to improve it.

3. What’s the craziest/funniest/most memorable comment you’ve read or heard from a YoDish user?

For me, the most memorable comments from users are the stories where a server or chef goes out of their way to create an incredible dining experience for someone with special dietary needs.  Celebrating those heroes is what YoDish is all about.

4. YoDish shares so many special diets dining reviews from the Walt Disney World Resort. If you had to pick a place to eat based on reviews which restaurant would you go to and why?

If I could go today, I would pick Kouzzina because I love Greek and Mediterranean cooking.  In particular, Kouzzina’s veg-heavy samplers look amazing.  Given that Kouzzina is closing, and I won’t be in Orlando until November, though, I will be sure to visit Sanaa.  There are so many incredible-looking Sanaa dishes in the app that I may not be able to limit myself to only one.  I know without question that I will order the Indian Style Bread Service.

5. We love how easy YoDish is to use when we visit Disney! Tell us, are there any new exciting updates to YoDish on the horizon?

I can’t tell you how excited I am about our upcoming release of YoDish 2.0 because we are adding features that we really wanted to have when using it ourselves.  Among the changes will be an increase in the number of dishes as well as the ability to interact with other users regarding dishes and reviews.  Our goal with YoDish is to revolutionize dining out with specialty diets by building an app so easy and fun to use that folks can’t help but join the moment.

Oh, candy. You love it or… you love it. Thank goodness Goody Good Stuff exists… and that they’ll be at the Food Allergy & Celiac Convention, too.  Goody Good Stuff is a natural gummy candy range that’s loaded with classic favourites, like Summer Peaches and Cheery Cherries. 1. What’s the craziest/funniest/most memorable time you’ve experienced with a Goody Good Stuff fan?

2. If you could create a Goody Good Stuff gummy candy flavor inspired by a Disney park or attraction, what would it be?

At Goody Good Stuff we love the Magic of Disney and the experiences it creates for all that visit – so we would love to make some gummy wands with powdered glitter sugar magic dust that kids could dip the wands in and create a little magic of their own!

3. You must love working in a candy factory. What’s something totally unexpected that we’d never guess about working at Goody Good Stuff?

All the team members get a voice in what we create – every Friday we all sit together and have an ideas hour where everyone has an equal voice!

4. Your gummy candies are the perfect topping for a non-dairy ice cream sundae! If you could create the ultimate sundae, what toppings would be on it?

Our perfect sundae would be with fresh blueberries, meringue crumbs and our delicious strawberry & cream gummies.

5. We know there are more ideas brewing over there! Can you give us a sneak peek of what’s coming up soon?

Goody Good stuff is developing more super sour ranges including the new Sour Cherries and Super Sour bears.

Meet Our Vendors! >> Nostalgic Cookies

Meet Our Vendors! is an ongoing series where you’ll be able to get a sneak peek of who you’ll see in November! Feel free to leave comments and questions–for us and for the vendor–about products, practices, and anything else that’s on your mind.

We love cookies. We also love memories. Pair the two and what do you get? Baked goods full of nostalgia, of course!

Nostalgic Cookies dedicated and certified gluten-free bakery located in Wellington, Florida. Using top quality natural ingredients and artisan culinary techniques, they have some pretty delicious goodies up their sleeves… Apricot Linzers and Kiwi Lychee Chocolate, anyone?

So it only makes sense we wanted to learn more, and share it with you! Here’s what they had to say:

1. You certainly tap on the heartstrings by recreating favourites that we all remember. What is your most nostalgic cookie and a memory from days past that goes with it?

I would say my all time favorite nostalgic cookie is the amaretto limoncello and my grandmother would make a lemon cake cookie that would fluff up in the oven and if you slammed the door they would go flat. But, they would still taste just as delicious.

2. If you could create a cookie/bar inspired by a Disney ride/attraction, what would it be?

If I could create a new gluten-free cookie after a Disney ride, it would be a peanut butter chewy cookie inspired by Peter Pan’s Adventures.

mad hatter3. What’s the craziest/funniest/most memorable time you’ve experienced with a fan?mad hatter

Not a crazy or funny but one family was so grateful for gluten-free cookies that they sent me a very nice card and a picture of the family eating our cookies on game night.

4. You’re having afternoon tea with Alice and the Mad Hatter, what Nostalgic Cookies flavors are you bringing for this very important date?

I would bring the Amaretto Limoncello & the Pomegranate Hibiscus because the all natural fruit would complement any tea the Mad Hatter would conjure and serve.

5. Tell us: what’s next in store for Nostalgic Cookies? Any secret formulations that you want to divulge?

We are introducing some exciting new flavors soon, but one in particular will be a big hit with kids as we all have probably pulled them apart and licked the cream before we ate the cookie. Hmmmmm:)
