Gary Jones is a key member of the culinary and special diets teams at Disney, having worked across many of the parks and resorts, as well as in various departments. Currently Gary is the Culinary Dietary Specialist for Walt Disney Parks and Resorts involved in creating and implementing meals for healthy lifestyles and special needs. With both pastry and savory experience, his unique cooking style combines his skills with sweet and savory, making inventive dishes with extensive experience throughout Disney and beyond. Anne Roland Lee, EdD, RD, LD
Anne Lee is the Director of Nutritional Services for Schar USA. She has an extensive celiac disease and gluten-free diet-related research background, and is the author of several chapters in nutrition and gastroenterology texts, as well as educational materials. Kate Hufnagel, founder of The Diary of Ana Phylaxis, experienced her first anaphylactic reaction after eating a dish she prepared herself with ingredients she had eaten for years–and thus began adult onset life-threatening food allergies. Amy Wicker is the founder and president of AllergySafeTravel (www.allergysafetravel.com), a not-for-profit that works with airlines, trains, hotels and restaurants to make accommodations for those with food allergies. Her personal interest began after her daughter was found to be anaphylactic to milk, eggs and all nuts. Dr. Kendra Becker
Dr. Kendra Becker is a 4A specialist (asthma, allergies, autism and atopy/eczema), Naturopathic Physician, Nurse Practitioner, Mother, Wife and Organic Lifestyleist. She understands the importance of integrating conventional and holistic medicine and the importance of combining therapies appropriately, helping families and treating illness with education and lifestyle changes. Susan Weber, CWC has been facilitating Health & Wellness Connections for over 30 years. A chance diagnosis of celiac moved her to provide Life Coaching with those who are challenged by gluten, training Hospital and Restaurant staff in the specifics of Gluten-Free Cooking & Cross Contamination and providing Culinary adventures in Gluten-Free cooking. Gary Jones, The Walt Disney World Resort Culinary Dietary Specialist
Gary Jones is a 1978 graduate of Johnson and Wales University. For the past 28 years he has had a wide range of opportunities working in catering, fine dining, quick service, family style, buffets and on the opening training team of Disneyland Paris all with the Walt Disney World Company. Gary has worked as a professional recruiter hiring hospitality staff and culinarians internationally, Managing Chef Instructor for The Disney Institute Chef de Cuisine for Disney’s Grand Floridian Beach Resort and Chef de Cuisine for Disney’s Wilderness Lodge and Disney’s Fort Wilderness Resorts. Currently Gary is the Culinary Dietary Specialist for Walt Disney Parks and Resorts involved in creating and implementing meals for healthy lifestyles and special needs.
Matt Maslowski, Disney’s Contemporary Resort Catering Sous Chef
Matt has been in the food and beverage industry for the past 30 years; in those years he has been trained in both pastry and savory. He spent 22 years in the pastry field, and now he is back doing savory. Matt has been with Disney for 4 years and worked at Disney’s Yacht & Beach Resorts doing pastry, then was moved over to Disney’s Park Event Operations doing both pastry and culinary; now he is currently at Disney’s Contemporary Resort working for the catering & conventions culinary team. Before Matt came to Disney he worked in many 5 Diamonds and 4 Star restaurants, hotels and casinos. His style of cooking is very eclectic and likes to intertwine savory with sweet. He combines the skills that he has honed in pastry and has brought the savory to another level. Matt went to culinary school and graduated in 1991 from The Restaurant School of Philadelphia with a pastry degree. While he was attending school he also was doing his internship at the Four Seasons Hotel in Philadelphia for 3 months and then was asked to stay on full time and was there for another 7 years. Matt was voted Rising Star Chef by Star Chefs when he was the pastry chef at Lacroix in The Rittenhouse Hotel in Philadelphia.
Despite being born with life-threatening food-allergies, Elizabeth Barbone graduated from the Culinary Institute of America. Today Elizabeth develops delicious and creative recipes for the food allergic and gluten-free communities. She connects with readers through her site GlutenFreeBaking.com, cooking classes, and regular radio and television appearances. Elizabeth is the author of two cookbooks: and hosts the “Cook Bliss” podcast.
Anne Roland Lee, EdD, RD, LD
Anne Lee is the Director of Nutritional Services for Schar USA. Previously she was the nutritionist at the Celiac Disease Center at Columbia University where she was involved in patient care, and research. Her research has resulted in published articles on the effect of a gluten-free diet on the quality of life, the nutritional adequacy of the gluten-free diet, the economic impact of a gluten free diet, and on the cross contamination of inherently gluten free grains. She has authored chapters on celiac disease in nutrition textbooks as well as co-authored a chapter in a gastroenterology text. Anne has developed numerous educational materials on the gluten free diet for patients and both clinical and food service professionals. Anne has been an ADA member for many years and has reviewed the chapters on celiac disease for the ADA on-line nutrition care manual. She is also a member of the ADA Gluten Intolerance Work Group who developed the Gluten Intolerance tool kit.
She completed her Doctorate in Nutrition Education this Fall from Teachers College of Columbia University. Her dissertation topic is the impact of social support networks on quality of life in individuals with celiac disease.
Kate Hufnagel is an engineer-turned-project manager-turned-consultant who refuses to let her life-threatening food allergies define her or hold her back from living her life. In the ‘90s, she spoke to multiple college audiences about being a female engineer in the workplace and, in 2005, she presented at the Society of Women Engineers’ National Conference in Anaheim, CA, on effective networking techniques. As an employee of multiple Fortune 500 companies, Kate facilitated workshops to help teams achieve their desired outcomes. And, for over ten years, Kate conducted dynamic team-building exercises while successfully leading and managing a variety of teams and organizations across the Intelligence Community. She is also a Project Management Professional and a Certified Scrum Master. In October 2012, Kate experienced her first anaphylactic reaction after eating a dish she prepared herself with ingredients she had eaten for years. Today, Kate’s passion for helping others navigate their “new normal” has her focusing on helping food allergy friendly businesses succeed and supporting others with food allergies through her website, www.TheDiaryOfAnaPhylaxis.com. She is thrilled to be speaking to the attendees of the Food Allergy & Celiac Convention at Walt Disney World and looks forward to meeting you, especially if you adult on-set food allergies.
Joel Warady, Chief Sales & Marketing Officer
When Joel was 15 years old, he talked his way into a multi-summer job as a golf photographer on the PGA tour, with press credentials provided by the Chicago Tribune. He ended up photographing Tom Watson’s first ever PGA win, and interviewed the likes of Arnold Palmer, Jack Nicklaus, Lee Trevino, and Hale Irwin. Ever since then Joel has had a love for meeting new people and taking on unexpected adventures.
Joel began his career working for Dominick’s, a chain grocery store based out of Chicagoland. Before customer service was standard, Joel helped develop the position of a Front End Manager, which ultimately became a Customer Service Manager. To this day he can’t enter a supermarket without “walking the aisles” to make sure everything is in its place.
From there Joel took his talents to Northwestern Mutual Life to work as a Field Director, where he was involved with the recruiting, training and managing of new financial executives, while at the same time providing financial advice to his clients as an insurance agent. He was a multiple year member of the Million Dollar Round Table, and was recognized as being one of the top 3% insurance agents in the world.
For the past eight years, Joel has specialized in Marketing, Business Growth, and Social Media Consulting, focusing on companies with a desire to increase their customer engagement. He worked with entrepreneurial small to mid-sized companies, as well as Fortune 500 companies, consulting on trends in marketing and assisting with Web 2.0 and social networking integration. He has also worked on numerous word-of-mouth campaigns for his clients, both in the U.S. and internationally.
Joel is currently the Chief Sales & Marketing Officer for Enjoy Life Foods, the #1 brand in the allergy-friendly, gluten-free marketplace. Having spent a number of years on the agency and consulting side, he now brings his expertise to the brand side, and utilizes his knowledge gained from numerous client campaigns to focus on building a single brand.
Amy Wicker, founder and president of AllergySafeTravel (www.allergysafetravel.com), takes a personal and proactive role in protecting travellers with food allergies after her daughter was found to be anaphylactic to milk, eggs and all nuts. She has one simple dream: that her family and others can travel without worrying about their health and safety.
She set out to found the not-for-profit AllergySafeTravel to encourage airlines, trains, hotels and restaurants to make accommodations for the more than 15 million Americans with food allergies.
As a former television producer/reporter, Wicker recognized that unless the issue of food allergies while traveling became an issue, the plight of 65 million people with either food allergies, celiac disease or diabetes, would be marginalized.
Wicker went to work to get the word out:
- Acting as executive producer of her short film “More Than An Inconvenience,” Winner of 2013 Best Short Documentary, LA Film and Script Festival.
- Speaking to representatives from 14 different airlines during an airline association meeting, Airlines for America, Washington, DC, January 2014. Wicker was the first person from the food allergy community to be invited to speak on this issue.
- Working with officials at the Department of Transportation
- Appearing on local network television and radio shows, and being featured on the front page of The Chicago Tribune.

Her main passion is making sure that children with allergies are able to enjoy eating, and have safe version of all the foods kids love.
Amy Hull Brown is a certified holistic health practitioner, a mom of two children previously diagnosed with autism and ADHD, and founder ofWellAmy.com.
